November was dominated by my annual trip to Portland, Bizarro Con, and my birthday - as per usual. Gaelic Belle is a nod to my heritage; a decidedly French love of cooking and a terribly Irish penchant for liquid frivolity. There’s plenty to celebrate!

Sean O’Connor and I shot this set the very first time we met, and I couldn't be more proud of the work we've achieved over our time together. My thanks also to Rev, who lent us the use of his lovely kitchen. If you want to have the same sweet treats we shared on the day of this shoot, here’s the recipe:

Chocolate Stout Cupcakes

Ingredients:

  • ¾ cup soy milk

  • 1 teaspoon apple cider vinegar

  • 1 cup + 2 Tablespoons all purpose flour

  • ⅓ cup cocoa powder

  • ½ teaspoon baking soda

  • ½ teaspoon baking powder

  • ¼ teaspoon salt

  • ¼ cup stout beer

  • ¾ cup granulated sugar

  • ⅓ cup canola oil

  • 1 ½ teaspoons vanilla extract

Crumb Topping:

  • ¼ cup all-purpose flour

  • ¼ cup cocoa powder

  • ¼ cup granulated sugar

  • 2 Tablespoons canola oil

Directions:

  • Preheat oven to 350 degrees.

  • Sift dry topping together. Drizzle in the oil while tossing with a fork. Mix until crumbs form.

  • Whisk soy milk and cider vinegar. Set aside to curdle a bit.

  • Sift dry ingredients. Add stout, sugar, oil, and vanilla to the soy and vinegar mixture. Beat until foamy. Add dry to wet in two batches, and beat for two minutes. 

  • Pour batter into liners ¾ of the way full. Gently sprinkle on the crumb topping. Bake 20-22 minutes.
